It’s International Ice-cream Sandwich Day!

What could be better than a scoop of ice cream on a hot, cold or rainy day? A scoop of ice cream sandwiched between two layers of cookies or cake. In other words, an ice cream sandwich!

Nobody quite knows where this day originated from, or even the definitive place the ice cream sandwich itself started. There are pictures from 1900 of people eating them after paying nothing more than a penny.

The cold twin bursts of chocolate with the soft hint of vanilla between, leading to a small explosion of flavour, the very taste of delight.

Here is an easy recipe for an Ice-cream sandwich:

You will need

  • 2 chocolate chip cookies
  • 2 scoops Neapolitan/Vanilla ice cream
  • Rainbow sprinkles, for rolling

Directions:

  1. Top one cookie (flipped upside down) with ice cream and sandwich with another cookie.
  2. Roll in sprinkles and freeze until firm, 20 minutes.
